Vanilla Pound cake

Hello friends!! I have been down with a horrible throat infection these few days and I feel awful.. but i mean.. a little baking can solve everything right? (Wrong my mother will probably kill me for not resting) BUT STILL back to the main point. Heres an amazing pound cake that is not too sweet or dense!! However, I have to warn you that it does stray away from its original roots. Pound cakes are traditionally made by putting a pound of each ingredient + there is usually an ommition of leavening agents. Other than that.. I guess it is still pretty much a pound cake (unless you want to call it a loaf pan cake (??) ). This cake is perfect for afternoon tea breaks, breakfast.. actually its pretty much good for any part of the day so hopefully you will try it out soon!!

this recipe was slightly adapted from Baking Bites


1 1/2 cups self raising flour
1/2 cup butter (room temperature)
1 cups sugar
3 eggs (Separate yolks and whites)
1 vanilla bean/ 2tsp vanilla extract
1/2 cup milk

  1. Preheat oven to 180’c and grease/put baking paper on your loaf pan
  2. In a Large bowl, cream together your sugar and butter until light and fluffy then add in your 3 egg yolks one at a time and beat accordingly
  3. In a separate bowl, beat your egg whites until they reach stiff peaks
  4. Add your vanilla bean seeds/ vanilla extract into the butter mixture and mix
  5. Stir 1/3 of the flour mixture into the butter mixture, followed by half of the milk. Stir in an additional third of the flour mixture, followed by the remaining milk.
  6. Fold in your stiff peaks gently until it is incorporated in the mixture. Then pour the mixture into your loaf pan
  7. Bake for 50 minutes

Blessed with the best- really. Met up with the kiddos (although I somehow look like the younger one) and went to Refuel cafe at Bedok Reservoir which was really not bad except there were some school kids filming a project (?) so it kinda killed the atmosphere. Had brunch although it was like 4+pm (ALL DAY BRUNCH AMEN) HA and was stuffed because the portions were pretty huge.  I had the porky waffle set (or something along that line..) and i definitely was not expecting like a whole waffle… The food was pretty good i guess!! except the pulled pork got a little jelat near the end cause it was super sweet. The only thing that was pretty meh was the iced chocolate that i paid $5.90 for!! Probably wouldn’t order that again. Oh and the cafe is pretty warm too.. just for heads up. Other than that, I guess its worth a second trip! Chatted with the bunch of kiddos as they filled me in on their school life and I really really miss being in AHS. Or maybe I’m just sick of the holidays, I mean who knew that 6 months is reeeeally too much to handle. Like I’m just dying to start school ASAP honestly. Okay back to the main point- overall, I guess it was a really nice short meetup!!

Oh and before I met them, some girl came up to me and was like  “I’m a lesbian, can you take a picture with me.” and before i could even respond with a “what” she whipped out her camera and i instinctively smiled welp.

I guess its safe to say that today was pretty interesting… Heres to more adventures and future posts. 🙂
